“Bread should never be stored in the refrigerator. While the cooler temperature of the refrigerator does slow down mold growth, the refrigeration conditions will speed up the staling of bread, making it unfit to eat much sooner than it can become moldy. This is because the starch present in the bread re-crystallizes when it cools,” says the expert.
