Semolina in cooking has been known since the 13th century, and this product was discovered by accident. Once the millers noticed that after grinding the wheat grain, a small part of the small particles remains, which are unsuitable for baking bread. That is, semolina is the waste of flour mill production.
Then they began to sift out these grains and prepare a viscous porridge with milk from them. They soon became a well-known delicacy, as the process of collecting the small particles was very painstaking.
