What mushrooms should not be added to soup because they release toxins?
Doctors warn that some types of mushrooms actively release toxic substances when cooked. These include lamellar species – russula, milk mushrooms, chanterelles and trumpets. The water in which these mushrooms were boiled must be drained, and it is better to add them to salads, sauces or fry.
Another taboo for soups is overripe mushrooms. They contain spoiled protein that is difficult to digest. In addition, they may contain mold and single-celled parasites – amoebas.
