This is ricotta – an Italian fresh cheese that has been produced for many centuries. The name of the cheese comes from a word that translates as “re-cooked”, because this is precisely the technology for its production. The whey is heated, vinegar or lemon juice is added to coagulate the whites, then the curd is separated from the liquid through a thin cloth. The resulting cheese is white in color, soft, slightly grainy and sweetish in taste.
