Scientists have found out why red wine causes headaches

Two scientists from the University of California, Davis, believe they have figured out why cabernet, pinot noir and other varieties of red wine cause such violent hangovers.

Andrew Waterhouse, professor of oenology, and Apramita Devi, postdoctoral researcher in food science and technology, said red wines are high in quercetin, which affects the body's ability to process alcohol properly.
Quercetin is a phenolic compound found in the skin of grapes. Red wine has more quercetin than white wine because the skins of red grapes remain in the fermentation process longer.
