The explosively flavored dish has become a “culinary success” for chef Mario David García, who entertains diners as he cooks in heat-resistant gloves and safety glasses, using an oven made of volcanic rock, wood and coal to prepare a Margarita.
He has been working on the Pacaya volcano for five years, and according to Mario, this mountain allows you to “pamper yourself and admire it”. “I sold everything from ice cream to vegetables, but I never thought that a volcano would become the starting point of my culinary success,” Mario told The Times.
